If you haven't experienced it, it's hard to explain. We work the hardest to improve the chef experience and it comes through in the food and positivity during the dinners.
Guests frequently comment they'd like to see the menus in advance and we understand that desire. However, the format is designed to remove restrictions from the chefs' creative process and that means we don't know the preliminary night dinner menus until typically a week or two before the event. The collaborative menus are not set until the day of so it's as big of a surprise to us as it is the guests.
