Executive Pastry Chef Kaley Laird, an Upstate New York native has now found herself at home in Charlotte North Carolina. Kaley spent her earlier years in the industry honing her skills in Michelin kitchens in the Bay Area of California. After working for several notable establishments and developing her own style of cooking, she found herself yearning to be closer to family and after craving a taste of nostalgia. Memories of the Carolina as a child pulled her back East. Originally, Kaley chose the growing city of Asheville North Carolina. Kaley's time spent in Asheville allowed her to become immersed in a different style of cooking and lifestyle. This experience provided her an outlet to expand her culinary abilities by learning the food and culture of Appalachia and the South. Despite being a style Kaley was unfamiliar with she learned to blend her unique style and allergen friendly baking with Southern flair. After six years of helping to grow a brand in Asheville, Kaley felt a pull back to a more city oriented lifestyle landing in the Noble Food and Pursuits restaurant group where she is now working to expand Copain Bakery. At Copain Bakery Kaley continues to honor her unique sweet and savory baking style while helping to redefine classic French baking with Southern inspirations.
