Born in Houston and trained in NYC. Came back to Texas and moved to Austin to help be a part of the humble beginnings of indie Chefs at Foreign and Domestic in Austin. Moved to Dallas in 2014 and slowly helped build the city to gain notoriety as Bon Apetite restaurant city of the year. Now farm manager at Profound Microfarms in Lucas just 20 minutes north of downtown Dallas, Joel holds his own dinner series at the farm using only product within 50 miles of the DFW area plus saving the seasons with fermented items throughout the years.
